How often does your family sit together at the dinner table and spend family time talking about each other's day? My family don't sit down together very often and I've decided to try out a Family Week Plan that I found at emeals. There is a very useful PDF file that has activities, recipes and a shopping list for the whole week!! The recipe that I'm look forward to the most is the Bacon-Wrapped Steaks which I've added below, to give you a sneak peak of what to expect in the Family Week Plan
- 2–6 oz Eye of Round Steaks
(1-inch thick) - 2 slices bacon
- 2 T vegetable oil
- ½ t salt, divided
- ½ t pepper, divided
- 1–8 oz pkg sliced fresh mushrooms
- 1 cup red wine
- 2 T butter
- Toothpicks
Wrap each steak with bacon and secure with a toothpicks. Sprinkle steaks with about ¼ teaspoon of salt and ¼ teaspoon of pepper. In a medium skillet, heat vegetable oil over medium-high heat. Add the steaks and cook for about 4 to 6 minutes per side, or until steaks reach your desired degree of "doneness". Remove, and set them to the side. Toss in the mushrooms with the pan drippings and cook for about 5 to 6 minutes (or until mushrooms are tender.) Add wine and cook until reduced by half. Whisk in the butter and the remaining salt and pepper, (¼ teaspoon).
