Speaking of the Holiday's...... I wanted to share with you this yummy little recipe for Candy Corn Cookies that'll put a smile on your little one's face for sure!

 Mini  Sugared  Candy  Corn  Cookies 
(Original recipe from: Alaska from Scratch)

Candy Corn Sugar Cookies

Makes around & about 50 mini cookies!!

These adorable little Candy Corn Cookies turn one of the most popular Halloween candy into a colorful and yummy sugar cookie. The perfect Halloween cookies for your Spooky Party, School Snack or Just for fun snack!! They're sure to be a big hit with the kids!

Ingredients:
  • 1 cup Butter, softened
  • 1 cup Sugar
  • 1 Egg
  • 2 tsp freshly grated Orange Zest
  • 2 tbsp Orange Juice
  • 1/2 tsp Vanilla
  • 3 cup Flour
  • 1/2 tsp Baking Soda
  • 1/8 tsp Salt
  • Yellow and Orange food coloring (Or Red to mix with Yellow to create Orange)
  • 1/3 cup Sugar for dipping cookies
Directions:
  1. Line the bottom and sides of a loaf pan with plastic wrap and set it to the side for later use.
  2. Cream together the butter and sugar (a stand-mixer fitted with the paddle attachment works great). Add egg, orange zest, orange juice and vanilla - Beat until mixed fully together.
  3. In another bowl, mix together the flour, baking soda and salt. Slowly add the flour mixture into the butter/sugar mixture, while mixing, until it forms a dough.
  4. Divide the dough into thirds and Press 1/3 of the dough into the bottom of the loaf pan.
  5. Add Yellow food coloring to another 1/3 section of dough. Mix well. Set aside the yellow dough.
  6. Add Orange food coloring (Or mix Red & Yellow if need be) to the last 1/3 of dough and mix well.
  7. Press the orange dough evenly on top of the white dough. Then press the yellow dough on top of the orange dough in a final layer. Pull the plastic wrap loosely over the top of the dough and place the pan into freezer for about 60 to 90 minutes.
  8. Preheat oven to 375 degrees.
  9. Lift the dough out of the pan and lay it onto a cutting board and remove plastic wrap. Use a long, sharp knife and cut the dough into 1/4-inch slices.
  10. Cut each slice into 6 small triangles.
  11. Bake on an ungreased cookie sheet for 5 to 7 minutes.
  12. While the cookies are baking, place 1/3 cup of sugar in a small bowl.
  13. Once cookies are ready to come out of the oven, Let them cool for 1 minute, then dip them in the sugar while they are still warm and place on a cooling rack or tray.

What to Cook for Dinner for Picky Eaters



I ran across this wonderful eBook the other day that's full of recipes for picky eaters. My daughters are very picky eaters, my youngest is the worse.... I'll admit that they get their picky food habits from me. I was very interested in what kind of recipes were going to be in the book due to it being written by a chef. I'm a country girl and we never eat too fancy and I was worried that the recipes were going to be too "up-class" for my picky eaters but I was very wrong!

"What to Cook for Dinner for Picky Eaters" has all kinds of easy to make recipes that I'm sure any child would eat. Even if you have to change an ingredient to two.
As I was looking through the book, my youngest daughter happened to walk up and started looking at the book with me. I was very surprised when she asked me to make her some Crock-Pot Hamburger Soup! (The award winner recipe) Jade is the pickiest eater in the house and to hear her ask for something that she has never ate before put a big smile on this moms face!
The recipes in this book are simple to make and the ingredients are everyday foods used in ways that I would of never thought of. 

I also really like the tips and information at the beginning of the book.
It explains how kids don't like to eat foods that they aren't familiar with and if you serve unfamiliar food to your child, make sure you add something to the plate that you know they already enjoy and don't stop after serving it once and your child not liking it. Try Try Again!
"What to Cook for Dinner for Picky Eaters" also has information about how food can cause rashes like Eczema or make them worse. More people have food sensitivities that we realize, sometimes you won't even know that you have food sensitivities until it's pointed out to you. The book can help you with that.
I was very surprised on how helpful this book really is! 

I'll be using this recipe book regularly and I'm looking forward to seeing how my family likes all the wonderful looking recipes. My fiance's wanting me to make some 'Smothered Pecan-Encrusted Chicken with Apple Butter' for supper one day this week and I believe I'll give it try. Chef John's wife was trying to recreate a recipe she eat while they were visiting Boone, NC when she created the Smothered Pecan-Encrusted. I live in Candler NC, right outside of Asheville, not far from Boone! I can't wait to try out that chicken recipe.
This is one recipe book that every parent needs if their children are picky eaters!
